The holy of holies bathed voluptuous odors, where a very small team is engaged, each in harmony with its copper pan. This is the Magical moment !

We cook with a maximum of 3 kg of fruits with adapted cooking time to each to preserve the natural fruit flavor.

Tropical fruits aroma are very volatile!  Every day, the first pot is tasted for balancing alliances, sugar, and lemon, to a constant search for excellence.

This taste test is accompanied by a technical test: PH control with a PH meter and sugar rate with a refractometer.

Today, for the welfare of gourmets, we lowered the sugar rate to 50% (fruit sugar + sugar added) .Therefore, we have nicknamed our jams, our jellies, marmalades our «Divinely Fruity».
